Spicy Peanut Noodles

These spicy peanut noodles are done in less than 20 minutes and are the most indulgent and satisfying meal. If you love peanut flavor, these noodles are a must try!

Ingredients
  

  • ½ cup creamy peanut butter
  • 1 tbsp lime juice
  • 3 tbsp coconut aminos you can also use soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp coconut sugar or maple syrup
  • 1 tbsp sriracha
  • 2 cloves grated garlic
  • 1 tsp grated ginger
  • cup hot water
  • ½ tsp red pepper flakes plus more for garnish
  • green onions for garnish

Instructions
 

  • Put the water on the stove over low to medium heat. This way, the water can be set to high and quickly come to a boil by the time you are finished making the sauce.
  • Grate your ginger and garlic, and slice up a green onion.
  • Add all the ingredients except for the hot water and green onion to a bowl and whisk until combined.
  • Add the hot water to bring everything together.
  • Turn your stove up and bring the water to a boil. Cook your noodles according to the package instructions and rinse when they are done.
  • Simply add your sauce to the noodles, garnish with more red pepper flakes, green onion, and whatever else you like. Common garnishes are also sesame seeds, more sriracha, and of course, peanuts!
  • Serve and enjoy!
