Mediterranean Quinoa Salad
This quinoa salad brings all the classic mediterranean flavors and ingredients together in a satisfying, healthy meal.
- 1 can chickpeas
- ½ cup uncooked quinoa this will become ¾ cup cooked
- ¾ cup cherry tomatoes
- ¾ cup sliced cucumbers
- ¼-½ cup pickled onions
- ½ cup feta cheese crumbled
- paprika, garlic powder, salt, and pepper for roasting the chickpeas
Dressing
- ½ cup plain greek yogurt
- 2 tbsp white wine vinegar
- ¼ cup olive oil
- 2 cloves garlic grated
- 1 tbsp honey
- 3 tsp fresh dill or 1 tsp dried
- salt & pepper
First, prepare quinoa by adding it to a pot with double the amount of water. Let that come to a boil. Once boiling, reduce to a simmer and let the quinoa absorb all of the water. This should take about 15 minutes and you should be stirring occasionally throughout.
While the quinoa is going, oil and season your chickpeas. Bake these at 425℉ for 20 minutes.
Prepare veggies. Wash and cut cucumber and tomatoes.
Make the dressing. Add all the ingredients to a bowl and mix until completely combined.
Now, you just have to put it all into a bowl. Serve and enjoy!
