Creamy Roasted Pepper Pasta
Hearty and creamy roasted pepper pasta will be your new go-to comfort food recipe. It is super easy to make. Just roast your veggies, blend everything together and you get the perfect sauce.
- 3-4 red bell peppers roasted peppers from a jar also works
- 1 large shallot
- 3-5 cloves of garlic depending on how strong you want the garlic flavor to be
- ⅓ cup grated parmesan or pecorino romano cheese
- ¾ cup milk any kind of milk
- 1 tsp red pepper flakes plus more for garnish
- handful of basil leaves plus more for garnish
- ¾ tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried oregano
- olive oil for roasting
- salt & pepper
Roast the peppers, shallot, and garlic with salt, pepper, and smoked paprika in the oven at 425℉ for 25-30 minutes.
When that is almost finished, cook your pasta.
Blend your roasted ingredients with the rest of the ingredients until smooth and creamy.
Add to pasta and top with more basil, cheese, and red pepper flakes.
