Creamy Roasted Pepper Pasta

Hearty and creamy roasted pepper pasta will be your new go-to comfort food recipe. It is super easy to make. Just roast your veggies, blend everything together and you get the perfect sauce.

Ingredients
  

  • 3-4 red bell peppers roasted peppers from a jar also works
  • 1 large shallot
  • 3-5 cloves of garlic depending on how strong you want the garlic flavor to be
  • cup grated parmesan or pecorino romano cheese
  • ¾ cup milk any kind of milk
  • 1 tsp red pepper flakes plus more for garnish
  • handful of basil leaves plus more for garnish
  • ¾ tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • olive oil for roasting
  • salt & pepper

Instructions
 

  • Roast the peppers, shallot, and garlic with salt, pepper, and smoked paprika in the oven at 425℉ for 25-30 minutes.
  • When that is almost finished, cook your pasta.
  • Blend your roasted ingredients with the rest of the ingredients until smooth and creamy.
  • Add to pasta and top with more basil, cheese, and red pepper flakes.
