Preheat pan on low heat while you make the batter.
Grate one apple and chop the other. Set aside.
In a small bowl, whisk together your flour, baking powder, and spices. Set aside.
Whisk eggs, vanilla, maple syrup, olive oil, almond milk, and spices together until fully combined.
Add your dry ingredients and mix.
Fold in the shredded apples until the mixture is even.
Butter or oil your pan. Start pouring batter.
Sprinkle chopped apples into the batter once it is on the pan. When you can see the batter almost cooking through, flip. Cook for 1 more minute on this side.
